Sometimes keeping things simple is the best way, and no cocktail exemplifies this more than the Sour. With its minimalist three-ingredient formula—base spirit, citrus, and sugar—it has served as a blueprint for a plethora of classic cocktails, from the White Lady to Clover Club, French 75 to Side Car.
Hailing from the esteemed Punch family and originating in the mid-19th century, the Sour showcases the art of achieving balance. Its brilliance is found in the harmonious interplay of these three essential components. The citrus imparts vibrant acidity, harmonising with the character of the chosen spirit, while the sugar contributes body and measured sweetness to achieve a delightful equilibrium.
A personal recommendation is the incorporation of egg white, which imparts viscosity and a sumptuously velvety texture. This elevated touch not only enriches the flavour but also enhances the cocktail's visual allure, taking its appeal to new heights.
The Sour's true prowess lies in its adaptability, serving as a muse for classic and contemporary variations, including the ever-popular Gimlet and modern Tommy Margarita. Preparation:
0.5oz / 15ml Egg White
0.5oz / 15ml Sugar syrup (2:1)
0.5oz / 30ml Fresh lemon juice
2.0oz / 60ml Gin (or spirit of choice)
3 x Angostura Bitter hearts, lemon twist (discard)
Prepare a lemon twist garnish. Fill a coupe with cubed ice and put it to one side. Add all the ingredients into a cocktail shaker. Dry shake without ice for 10 seconds. Fill with cubed ice and shake for 10 seconds. Open and dip taste. Discard the ice from the coupe. Fine strain. Carefully create 3 x Angostura Bitters hearts in the foam. Express the lemon oils over the top of the cocktail and discard.
